Berry Good!
It’s summer time, so take advantage of the healthy fresh fruits of the season as much as you can! Berries are the sweetest treats of summer, and can be paired up with everything from non-fat cottage cheese to swirls of Devonshire cream, depending on the occasion! They go with everything…except maybe Brussels sprouts…but afterwards as dessert, they’re okay again, right?!?
Are you up for a smoothie? Make it with berries! How about a cobbler for after the bbq? Easy to do with berries. Want a snack to get you through the afternoon? Munch on berries straight from the basket. Just make sure to wash them first!

Berry Trifle

Original recipe yield: 12 servings
INGREDIENTS
* 2 cups cold milk
* 1 pkg. (4 serving size) JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling
* 1 (13.6 ounce) package fat free pound cake, cut into 1/2-inch cubes
* 1 pint strawberries, sliced
* 1 cup blueberries
* 1 (8 ounce) tub COOL WHIP FREE Whipped Topping, thawed
DIRECTIONS
1. Pour milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes or until well blended.
2. Place 1/2 of the cake cubes in 3-quart serving bowl; top with 1/2 each of the fruits. Spread pudding mixture over fruit. Repeat layers of cake and fruit. Top with whipped topping.
3. Refrigerate at least 1 hour or until ready to serve.
This dessert can also be made in a 13x9-inch pan.

Almond Strawberry Salad
INGREDIENTS
* 3 cups fresh baby spinach
* 1/2 cup sliced fresh strawberries
* 1/4 cup sliced honey-roasted almonds
* 1 tablespoon cider vinegar
* 1 tablespoon honey
* 1 1/2 teaspoons sugar
DIRECTIONS
1. In a large bowl, combine the spinach, strawberries and almonds. In a jar with a tight-fitting lid, combine the vinegar, honey and sugar and shake well. Serve immediately.
Of course, smoothies are always easy to make by mixing fresh fruit and frozen yogurt, or frozen fruit and fresh yogurt, or GOSH! Anything you think sounds tasty mixed in a blender!
